For this Schaarbeekse Kriek, 3 Fonteinen macerated freshly picked local Schaarbeekse sour cherries for a tad less than twelve months onto two-year old lambik. The maceration happened on a small foeder. Some more jonge lambik was used to blend this fine fruit lambik. The weighted average age of this Schaarbeekse upon bottling is more than twenty months. The final fruit proportion is 372 grams of Schaarbeekse sour cherries per litre of finished Schaarbeekse Kriek, More than 80% of the grains used while brewing, were sourced in our own Cereal Collective.
