Le Soupir - Angel Gone
Inspired by the British tradition of mixed fermentation brett beers, this beer was brewed with heirloom barley Chevallier malt and East Kent Goldings hops. It was fermented in a gin barrel with a british yeast strain and brett claussenii, and spent one year in the barrel with a final dry-hopping of six months !
A dry, funky and bitter ale, refined by a floral hoppy final.
